Cumin Lime Smashed Chickpea Avocado Sandwich
What would we ever do without chickpeas, I mean, really?? As a herbivore, I definitely need these little gems in my life. They’re so full of goodness and make up some of my favourite things, like hummus (duh), falafel and this Cumin Lime Smashed Chickpea Avocado Sandwich.
Another one of my favourite things? Super simple, quick and easy recipes that require minimal ingredients, just like this one! Oh, annnnother one of my favourites, anything cumin and lime. Or chili and lime. It’s the best. The best!!

Smashed Chickpea Avocado Everything
This avocado chickpea mixture isn’t just for sandwiches but I was really craving soup and sandwich today for some reason, so that’s where mine ended up. However, it’s just as good in a wrap or on it’s own as a salad.
For bread, we use Silver Hills Bakery sprouted grain bread at my house. It’s a local BC brand that uses ingredients I can feel good about, their breads are also vegan which can’t be said of many typical highly-processed breads you’ll find in the grocery store.
I eat toast almost daily, my favourites are good old peanut butter toast, avocado toast and almond butter and banana toast. Tahini is also amazing, actually anything spread on toasted bread is a winner, don’t you think?
Smashed Chickpea Avocado Sandwich
For this sandwich, I heaped a generous portion of chickpea-avo mix between two toasted pieces of Silver Hills Bakery Squirrelly Bread and topped with lettuce, cucumber and a little dijon mustard. A slice of fresh tomato would also be delicious in there, but feel free to throw on any of your favourite toppings. Oooo, sprouts would have been good too!! Someone try that for me!

Smashed Chickpea Avocado Sandwich Ideas
vegan mayonnaise, diced celery and red onion
chopped pickles, lemon and onion
sriracha sauce, cilantro and red onion
green onion, lemon and dried cranberries
Those are just a few quick ideas. You can either use avocado or vegan mayonaiise make smashed chickpea salad, from there, feel free to add in your favourite ingredients and make it your own!
Anyhoooo, try this delicious mix in a sandwich like I did, or try it in a wrap, or as a salad topper or just enjoy it as is! It’s high in protein and fibre, packed with flavour and ready in just a few minutes.Print
- 1 can chickpeas, drained and rinsed
- 1 avocado
- 1 1/2 tsp cumin
- juice from 1 lime, approx. 1 1/2 tbsp
- 1/2–1 tsp sea salt, to taste
- 1/2 tsp pepper
- 1 stalk of celery, finely chopped
- 1/2 red onion, diced
- Mash the chickpeas in a bowl, or pulse in a food processor.
- Add the rest of the ingredients and mix well.
- Spread a generous portion of the mixture between two slices of toasted sprouted grain bread.
- Top with your favourite sandwich toppings and enjoy!
