  • Maple Syrup: Being a maple dijon dressing, maple syrup is used to sweeten but you could also use honey (wouldn’t be vegan) or agave syrup. For sugar-free dressing, you could use liquid monk fruit sweetener.
  • Dijon Mustard: Any style of dijon mustard or a grainy mustard works.
  • Apple Cider Vinegar: You can use apple cider vinegar, white wine vinegar or red wine vinegar. Balsamic vinegar and lemon juice are also good for a variation on this recipe.
  • Tahini: Tahini is a paste made from sesame seeds and easy to find in well-stocked grocery stores or Middle Easter or Mediterranean specialty stores. I like Soom and Arz Fine Foods. Good tahini should be smooth, creamy and not overly bitter.

Storing

This easy maple dijon dressing whips up in seconds with just 4 simple ingredients and is perfect for green salads, bowls, roasted vegetables and more.


Ingredients

  • 3 tbsp maple syrup (45 mL)
  • 3 tbsp dijon mustard (45 g)
  • 4 tbsp tahini (60 g)
  • 6 tbsp apple cider vinegar (88 mL)
  • pinch of salt and pepper

Instructions

  1. Add all of the ingredients to a bowl or jar and whisk until smooth and combined or a sealable container and shake vigorously to combine.
  2. Use the dressing right away or store in a sealed container in the fridge for up to 1 week.

Notes

The recipe makes approximately 1/2 cup of dressing or enough to dress 4-6 servings of salad.
