Ingredients

- Maple Syrup: Being a maple dijon dressing, maple syrup is used to sweeten but you could also use honey (wouldn’t be vegan) or agave syrup. For sugar-free dressing, you could use liquid monk fruit sweetener.
- Dijon Mustard: Any style of dijon mustard or a grainy mustard works.
- Apple Cider Vinegar: You can use apple cider vinegar, white wine vinegar or red wine vinegar. Balsamic vinegar and lemon juice are also good for a variation on this recipe.
- Tahini: Tahini is a paste made from sesame seeds and easy to find in well-stocked grocery stores or Middle Easter or Mediterranean specialty stores. I like Soom and Arz Fine Foods. Good tahini should be smooth, creamy and not overly bitter.

Storing
- Store maple dijon dressing in a sealed container in the fridge for up to 2 weeks.

Maple Dijon Dressing
Ingredients
- 3 tbsp maple syrup, 45 mL
- 3 tbsp dijon mustard, 45 g
- 4 tbsp tahini, 60 g
- 6 tbsp apple cider vinegar, 88 mL
- pinch of salt and pepper
Instructions
- Add all of the ingredients to a bowl or jar and whisk until smooth and combined or a sealable container and shake vigorously to combine.
- Use the dressing right away or store in a sealed container in the fridge for up to 1 week.

Hands down my favorite vinaigrette! Love that thereโs no oil and Iโve never see both apple cider vinegar and changed to t out with balsamic. Both great. Just put it on my farro, apple, fennel salad. It hold up so weโll in the fridge with grains.ย
