Guys, please come over and help me eat all the snacks I’ve been making for the blog…someone? Anyone?! I can’t stop. They’re too good! I better start taking some to work instead of indulging ummmm….pre-breakfast, snack time, after work, dessert…anytime.
I totally didn’t just eat two as a pre-dinner snack as I type this. Okay, maybe I did. Seriously, someone come over and eat these up! These Pumpkin Pecan Balls are the tastiest little snacks I’ve made in while. I based them off the Raw Banana Bread Balls I made last week and they did not disappoint.
I recently asked on Facebook if you’d be interested in a e-book chock full of no-bake, easy vegan snacks and the answer was yes, yes, yes! But something that came up was people looking for raw snacks that were oil-free. Anyways, it’s something I’ve been trying to keep in mind and these little guys are oil-free, just like last weeks banana balls.
I’m not too concerned about my oil intake but I try not to go too crazy. Oil can very quickly add a lot of fat and calories to your diet but as long as you’re not dousing salads in olive oil, eating spoonfuls of coconut oil or deep-frying everyday, you should be a-ok.
It has it health benefits too, of course, so for me, the aim isn’t elimination, just moderation. Some people feel great on a higher fat diet, so it all depends what works for you!
I love pumpkin and pecan as ingredients, they work in so many great dishes and pecans are more or less candy, I would say. As for pumpkin, it’s just the best and I don’t seen any need to limit it’s use to the Fall. No way, man! Pumpkin all year round, baby!
I typically use any left over pumpkin puree I’ve got kickin’ around to make overnight oats and obviously I top them with pecans because, ahem, did I mention the candy factor yet? I’ve got some left over pumpkin from this recipe, so it’s pumpkin pecan oats for breakfast this week!
I use this lovely Farmer’s Market Organic Pumpkin for all my pumpkin recipes. The quality is really nice, it’s super smooth and full of flavour. You can buy it on Amazon but I’ve been able to find it at most major grocery stores.
- Place all ingredients in a food processor or blender and mix well.
- Roll into balls and store in the fridge.
Optional coatings: oats, hemp seeds, cocoa powder, finely chopped pecans or whatever else your heart desires!
