Nut-Free Gingerbread Cookie Dough Balls
These nut-free raw gingerbread cookie dough balls taste just like gingerbread cookie dough without the added fat or sugar! They only take 5 minutes to make with a few simple, wholesome ingredients and even though they taste like dessert they’re perfect for a healthy snack.
My original gingerbread balls are made with walnuts so they’re a little higher in fat than these raw gingerbread cookie dough balls and they’re not allergy-friendly for my nut-free friends. For this version, I decided to go completely nut-free and make them with heart-healthy oats so they can be enjoyed by all.
So many raw vegan energy ball recipes are made with a base of nuts so I like creating some nut-free versions for those with nut allergies or those watching the amount of fat in their diet.
I love my original gingerbread bite recipe but these ones are amazing too. If you love gingerbread cookies you will absolutely love the spiced ginger flavour in these cookie dough balls! Ginger, cinnamon and molasses are some of my favourite flavours so I had a hard time not devouring all of the dough as I rolled these into balls.
Dessert For Pre-Workout
One of my favourite ways to enjoy these raw gingerbread cookie dough balls is as a pre-workout snack! I like to pop a few about an hour before training for a boost in energy. They’re easily digestible and provide some healthy carbohydrates to energize my workout. They’re great post-workout too! Even though it’s important to eat protein after training, don’t forget you need carbs to recover too!
Homemade Healthy Snacking
It’s so easy to make healthy snacks like this at home that there’s really no need to spend your money on store-bought energy bars. Making healthy snacks and treats like this at home is a much more affordable option, especially if you just use ingredients like oats and dates. Although there are some excellent store-bought options these days, I like knowing exactly what’s in my treats and always having a batch on hand when I need a quick snack or treat!
Plus, if you’re craving sweets, enjoying one or two of these cookie dough balls is a healthy way to satisfy your sweet tooth without going overboard. Just don’t eat like, 6 at a time like I do, woopsies. This is why I haven’t shared many treat recipes lately. I may have a problem.
5 minutes. You are literally 5 minutes away from eating raw gingerbread cookie dough. Not only that, you only need oat, dates, molasses and spices to make these.
Also, FYI..roll these into smaller, little bite-sized cookie dough balls and add them to banana nice cream to make a gingerbread cookie dough blizzard. It’s ridiculously good. You can even spice your ice cream with the same ingredients for a double gingerbread cookie dough blizzard. OMG.
ALSO…try adding some unsweetened shredded coconut and roughly pressing it into clusters to make raw gingerbread granola. So many options. You can also press the dough into a loaf pan and cut into bars if you prefer! Whatever you do with this dough, you will love it!

These yummy, little no-bake bites are easy to make with just a few simple ingredients and they taste like gingerbread cookies!
Ingredients
- 2 cups (340 g) loosely packed, soft pitted dates (see notes)
- 1 1/3 cup (150 g) oats
- 2 tbsp (40 g) molasses
- 3 tsp ground ginger
- 2 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 tsp pure vanilla extract
- 1/4 tsp nutmeg
Instructions
- Place all ingredients in a high-powered blender or food processor and mix until it forms a thick dough.
- Roll into approximately 14 balls.
- Store in the fridge or freezer.
Notes
It’s important to use soft, fresh dates in no-bake recipes like this. The dates sweeten the recipe and hold it all together. Medjool, sayer or deglect noor dates are the best. If you only have hard, dry dates, soak them in hot water for 20 minutes and drain before using.
