Ingredient Notes

This list is not complete. Please see the recipe card at the end of the post for the complete ingredient list with measurements.

  • Cashews: Use raw cashews without oil or salt added. You can substitute almonds or walnuts.
  • Coconut: Use medium or fine unsweetened shredded coconut (desiccated coconut).
  • Dates: You’ll need 1 cup tightly packed which comes out to 250 grams. You can use medjool dates, deglect noor or sayer dates just to make sure they’re soft and fresh. If you only have dry dates, soak them in hot water for 15 minutes then drain before using.
  • Cocoa Powder: You can use raw cacao powder or regular cocoa powder. You can substitute chocolate protein powder for a protein boost.

Step-by-Step Instructions

Step 1: Add the nuts (cashews or sub almonds or walnuts or a mix) to a food processor and process into a coarse flour. If there are a few larger pieces remaining that’s ok but they should be mostly broken down.

Step 2: Add the remaining ingredients and process into a sticky doughy texture. It may be a little crumbly but you should be able to press the mixture together between your fingers.

Step 3: Use your hands to roll the dough into balls and enjoy! If you’d like, roll the balls in cocoa powder or coconut for a pretty effect and extra texture and flavour.

FAQs

How long do these balls keep?

You can store these balls for a few days a room temperature, up to 10 days in the fridge or for a couple months in the freezer. Store in any airtight container.

What do I do if the mixture is too dry?

This should be avoided by using soft, moist dates. If your dates are overly dry or you’re unsure, soak them first, pitted, for 10-15 minutes in hot water then drain well before using in the recipe.

If the mixture is too crumbly after blending, add 1 tsp warm water and process again. That should bring it together but if not, repeat until the dough is sticky.

Ingredients 

  • ½ cup raw cashews, almonds or walnuts
  • 1 cup tightly packed cup soft pitted dates
  • 1/2 cup unsweetened fine coconut
  • 1/4 cup cocoa powder
  • 1/4 tsp sea salt, optional
  • coconut or cacao powder for rolling, optional

Instructions 

  • Place the nuts in a food processor and processor into a coarse, chunky texture.
    ½ cup raw cashews
  • Add the rest of the ingredients and process until it forms a thick dough.
    1 cup tightly packed cup soft pitted dates, 1/2 cup unsweetened fine coconut, 1/4 cup cocoa powder, 1/4 tsp sea salt
  • Roll into 14 balls. Option to roll each ball in coconut, cacao or both.

Notes

Store in an airtight container in the refrigerator for up to 10 days or freezer for up to 3 months.
It’s important to use soft, moist dates so the balls stick together. If your dates are very dry, be sure to soak them in hot water for 10 minutes then drain well before using in the recipe.
