Chocolate Coconut Energy Balls

You've got to try these delicious and decadent yet wholesome and nutritious little balls of energy! Stash these in the freezer so you've got a tasty treat on hand to satisfy your sweet tooth.

Ingredients

  • ½ cup raw cashews almonds or walnuts
  • 1 cup tightly packed cup soft pitted dates
  • 1/2 cup unsweetened fine coconut
  • 1/4 cup cocoa powder
  • 1/4 tsp sea salt optional
  • coconut or cacao powder for rolling optional

Instructions

  • Place the nuts in a food processor and processor into a coarse, chunky texture.
    ½ cup raw cashews
  • Add the rest of the ingredients and process until it forms a thick dough.
    1 cup tightly packed cup soft pitted dates, 1/2 cup unsweetened fine coconut, 1/4 cup cocoa powder, 1/4 tsp sea salt
  • Roll into 14 balls. Option to roll each ball in coconut, cacao or both.

Notes

Store in an airtight container in the refrigerator for up to 10 days or freezer for up to 3 months.
It's important to use soft, moist dates so the balls stick together. If your dates are very dry, be sure to soak them in hot water for 10 minutes then drain well before using in the recipe.
