Marinated Chickpeas

Simple, balsamic marinated chickpeas that are the perfect flavourful addition to salads and bowls.

Ingredients

  • 19 oz can of chickpeas drained and rinsed (2.5 cups)
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili flakes

Instructions

  • Mix everything together in a sealable container and marinate for at least one hour up to overnight.
  • Store in the fridge for up to 4 days and use in salads, bowls, soups, wraps or as a simple side dish or snack.

Notes

Omit the red pepper flakes if you're sensitive to spice.
For additional flavouring, try up to 1 tbsp of maple syrup, up to 1 tbsp dijon mustard and/or 2-3 minced cloves of garlic.
