– 1 lb (454 g) pasta of choice – 1 ½ tbsp (22 g) butter – 2 garlic cloves, minced – 1 15 oz can pumpkin – 1 14 oz can coconut milk – ¾ tsp paprika – ¾ tsp salt – Fresh or crispy sage leaves, for serving, optional
Cook your choice of pasta in salted water according to the package instructions. This recipe works well with short pasta shapes like penne.
While the pasta is cooking, heat the butter in a large pan. Add the garlic and cook for 1-2 minutes until fragrant.
Stir in the pumpkin puree, coconut milk, paprika and salt. Reduce the heat and simmer until the sauce thickens, about 5-10 minutes.
Add the cooked pasta and mix well.
Garnish with sage if you like and enjoy your delicious pumpkin pasta!
