Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion with a pinch of salt and cook for 5–6 minutes, until softened.
Stir in the bell pepper and jalapeño and cook for 3 minutes. Add the garlic and cook for 1 minute, until fragrant.
Add the chili powder, cumin, smoked paprika and oregano. Cook for 30–60 seconds, stirring constantly, until fragrant. Stir in the tomato paste and chipotle peppers and cook for 1–2 minutes, stirring frequently, until the tomato paste darkens slightly.
Stir in the diced tomatoes, vegetable broth, tamari and sweet potato. Bring to a gentle simmer, partially cover and cook for 18–22 minutes, or until the sweet potato is fork-tender.
Stir in the black beans and corn. Simmer uncovered for 5 minutes to heat through. If desired, mash some of the beans and sweet potato against the side of the pot with the back of a spoon, then stir to naturally thicken the chili.
Remove from the heat and stir in the lime juice, apple cider vinegar and cilantro. Taste and season with salt and pepper as needed. Serve with your favourite toppings.
