Sesame Noodles

This easy sesame noodle recipe comes together in about 20 minutes with chewy noodles, crisp broccoli and a flavourful sesame-ginger sauce. They're delicious served warm or cold and can be enjoyed as-is or topped with extra vegetables or your favourite protein.

Ingredients

  • 9 oz. dry noodles such as spaghetti or fettuccine 250 g
  • 4 cups broccoli florets 284 g

For the Sauce

  • 2 tbsp soy sauce or gluten-free tamari 37 ml
  • 2 tbsp sesame oil 30 ml
  • 2 tbsp rice vinegar 30 ml
  • 2 tbsp water
  • 2 tbsp mirin 30 ml
  • 3 cloves garlic minced, 12 g
  • 1 tbsp fresh ginger peeled and minced, 12 g
  • 1-2 tsp chili garlic paste such as Sambal or Sriracha optional

For Serving

  • chopped scallions
  • sesame seeds

Instructions

  • Bring a large pot of water to a boil and cook the noodles according to package directions until al dente. If serving the noodles cold, rinse under cold water and drain well.
  • While the noodles are cooking, steam the broccoli for 2–3 minutes, until bright green and just tender.
  • Add all of the sauce ingredients to a jar or bowl and whisk or shake well to combine.
  • Add the sauce to a large skillet or wok and simmer for 2-3 minutes over medium-high heat, string often until it starts to thicken. Alternatively, for a cold noodle dish, toss the sauce with the noodles and broccoli and serve.
  • Once the sauce has thickened slightly, stir in the noodles and steamed broccoli. Mix well and cook for another 1-2 minutes until the noodles are heated through and coated in the sauce. Serve topped with chopped scallions and sesame seeds.

Notes

Noodles: You can substitute gluten-free noodles, such as brown rice pasta, buckwheat or rice noodles, if needed.
