This easy sesame noodle recipe comes together in about 20 minutes with chewy noodles, crisp broccoli and a flavourful sesame-ginger sauce. They're delicious served warm or cold and can be enjoyed as-is or topped with extra vegetables or your favourite protein.

Ingredients
9oz.dry noodles such as spaghetti or fettuccine250 g
4cupsbroccoli florets284 g
For the Sauce
2tbspsoy sauce or gluten-free tamari37 ml
2tbspsesame oil30 ml
2tbsprice vinegar30 ml
2tbspwater
2tbspmirin30 ml
3clovesgarlicminced, 12 g
1tbspfresh gingerpeeled and minced, 12 g
1-2tspchili garlic paste such as Sambal or Srirachaoptional
For Serving
chopped scallions
sesame seeds
Instructions
Bring a large pot of water to a boil and cook the noodles according to package directions until al dente. If serving the noodles cold, rinse under cold water and drain well.
While the noodles are cooking, steam the broccoli for 2–3 minutes, until bright green and just tender.
Add all of the sauce ingredients to a jar or bowl and whisk or shake well to combine.
Add the sauce to a large skillet or wok and simmer for 2-3 minutes over medium-high heat, string often until it starts to thicken. Alternatively, for a cold noodle dish, toss the sauce with the noodles and broccoli and serve.
Once the sauce has thickened slightly, stir in the noodles and steamed broccoli. Mix well and cook for another 1-2 minutes until the noodles are heated through and coated in the sauce. Serve topped with chopped scallions and sesame seeds.
Notes
Noodles: You can substitute gluten-free noodles, such as brown rice pasta, buckwheat or rice noodles, if needed.
