Apple Cinnamon Baked Oatmeal
This easy baked oatmeal smells amazing, tastes amazing and is easy to customize with add-ins like coconut, raisins, nuts and seeds.

- 2 cups oats 200 g
- 2 tbsp ground flaxseed 16 g
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg or allspice optional
- 1/4 tsp salt
- 1 cup water
- 1 cup plant-based milk
- 1 medium apple diced
- 1 tsp pure vanilla extract
- 3 tbsp raisins
- 3 tbsp chopped walnuts or pecans
Preheat the oven to 350 F.
Mix the oats, flax, baking powder, spices and salt in an 8x8-inch baking dish.
Add the rest of the ingredients and mix. Spread into an even layer.
Bake for 30 minutes until firm and golden brown.
Let it sit in the dish for 5-10 minutes, then slice into 6 pieces and carefully lift out with a spatula.
Enjoy plain for a quick snack or serve with toppings like berries, dairy-free yogurt, almond butter and a drizzle of pure maple syrup.
- Leftovers can be stored in the fridge for up to 5 days or frozen for up to 3 months.
