Apple Cinnamon Baked Oatmeal

This easy baked oatmeal smells amazing, tastes amazing and is easy to customize with add-ins like coconut, raisins, nuts and seeds.

Ingredients

  • 2 cups oats 200 g
  • 2 tbsp ground flaxseed 16 g
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg or allspice optional
  • 1/4 tsp salt
  • 1 cup water
  • 1 cup plant-based milk
  • 1 medium apple diced
  • 1 tsp pure vanilla extract
  • 3 tbsp raisins
  • 3 tbsp chopped walnuts or pecans

Instructions

  • Preheat the oven to 350 F.
  • Mix the oats, flax, baking powder, spices and salt in an 8x8-inch baking dish.
  • Add the rest of the ingredients and mix. Spread into an even layer.
  • Bake for 30 minutes until firm and golden brown.
  • Let it sit in the dish for 5-10 minutes, then slice into 6 pieces and carefully lift out with a spatula.
  • Enjoy plain for a quick snack or serve with toppings like berries, dairy-free yogurt, almond butter and a drizzle of pure maple syrup.

Notes

  1. Leftovers can be stored in the fridge for up to 5 days or frozen for up to 3 months.
