This is my new favorite. I was really happy how it came out. There are definitely a few steps to take but it’s not bad once you get going. I think it needs the ginger lime sauce at the end so don’t skip it!

ingredients:

Mix the sweet chili sauce and ginger lime sauce.

Prepare the mango for the mango salsa.

Mix together the mango salsa.

Toss the tofu in cornstarch, salt and pepper and fry.

Add the sweet chili sauce and cook a few minutes to thicken.

Assemble the bowls and top with ginger lime sauce.
