Sweet little no-bake gingerbread bites that take just 5 minutes to make in a food processor. Try them for a healthy holiday treat or snack on-the-go. You can even enjoy them as part of a healthy breakfast.



  • 1 1/4 cup walnut pieces
  • 1 cup packed, soft pitted dates
  • 1 cup quick oats (gluten-free if required)
  • 2 tbsp cinnamon
  • 3 tsp ground ginger
  • 1 tbsp pure maple syrup
  • 2 tbsp blackstrap molasses
  • 1/2 tsp sea salt


  1. Add the walnut pieces and oats to a food processor. Mix until broken down.
  2. Add the dates and continue to process until it forms a dough.
  3. Add in the rest of the ingredients and mix.
  4. Remove from processor, roll into balls and enjoy!
  5. Store in the fridge in an air-tight container.
  6. Makes approximately 16-18 balls.
