Hey everyone! I’m back for the second day in a row, amazing right?! Time for another edition of What I Ate Wednesday. It’s Sensible Snacking Month with Peas and Crayons so in addition to my WIAW post, I’ve listed 5 quick and easy, healthy snacks for you at the bottom!
What I Ate Wednesday #9
I have to apologize for my WIAW photos but they’re all taken on-the-go on my iPhone! You get the idea whether they’re pretty or not right?! Today was a rest day for me so I didn’t eat as much as yesterday, just 3 meals and 2 snacks and I’m taking the night off dessert after eating Vegan Chocolate Pudding the last two nights in a row!
Oats, almond milk, 1 banana, hemp seeds, natural peanut butter

Strawberries and Cashews
2 organic apples and raw pumpkin seeds
Lentil burrito with red and orange bell peppers, fresh cilantro, avocado, salsa, green onion, red onion and shredded carrots. I made the lentil ‘meat’ with cumin, garlic powder, sea salt, cayenne and black pepper.

I eat on a pretty regular schedule during the week and I almost always have 2, if not 3, snacks during the day and sometimes another evening snack. Typically it’s just fruit, nuts and seeds because they’re such an easy solution for busy weekdays. If I food prep on Sundays I always make some energy bites and bars to grab during the week, you can check out my Oat and Almond Bars, 5-Minute Hemp Bites and Chocolate Chia Energy Bars for a few ideas.
Here are a few other sensible snacks options:
1. Homemade Larabars
My favourite, and the easiest to make, is simply equal parts cashews and dates. Just blend and roll into balls or shape into bars!
2. Vegan Smoothies – Frozen fruit, vegan protein powder and non-dairy milk.
Just blend and enjoy! There are so many options and they’re all delicious. Try mango and banana, strawberry peach or blueberry!
3. Banana sliced and topped with Peanut Butter and Cinnamon
You really can’t go wrong with banana and peanut butter! Slice the banana up so you have round little peices, top each peice with a bit of PB and sprinkle cinnamon over them all.
4. Frozen Grapes
These are one of my favourite treats and they’re so good in the summer! They make an excellent alternative to sugar-filled popsicles. When I purchase grapes, I just wash them and throw them all in the freezer in a big Tupperwear for delicious after-dinner treats!
5. Dates Stuffed with Almond Butter
Need I say more?
