This is such a simple meal to put together!  Very flavourful with lots of healthy veggies. 

This was so easy to throw together and delicious! I’m so glad it yields a big batch, because I think the flavors tasted even better the next day for lunch. Will definitely add this to my lunch prep recipe rotation.
