grate zucchini and squeeze out liquid

mix together the dry ingredients

add zucchini to dry ingredients

mix together wet ingredients

fold wet ingredients into dry ingredients

stir in the  walnuts

scoop mixture into loaf pan and bake

cool in pan for 30 minutes

slice and enjoy!

I just made this tonight, and it was really good! I separated the batter into 3 mini loaf pans and cut the baking time down to 30 mins.
