broth onion garlic olive oil mushrooms arborio rice lemon parsley

step 1

heat the broth in a pot on the stovetop

step 2

saute the the onion, garlic and thyme

step 3

add the mushrooms and cook down

step 4

add the rice and "toast" for 1 minute

add stock 1 cup at a time to cook the rice

step 4

stir in the lemon and parsley
