cauliflower chickpea curry
Saute the onion, garlic and ginger until fragrant.
Add the curry paste and tomato paste.
Stir in the carrots, bell pepper and chickpeas.
Stir in the coconut milk, water and cauliflower and simmer.
Add the fresh cilantro.
Enjoy your delicious curry!
