Pan fry the tofu until golden and crispy on all sides.
Cook the onion, garlic, ginger and tomato for 4-6 minutes.
Add the spices and cook for 1 more minute.
Add the coconut milk, water or broth and sugar and bring to a simmer.
Add the tofu and cook for 6-8 minutes until thickened.
