easy tofu coconut curry

This was a hit. I was worried it would be too much tofu but it was so flavorful and yummy, my husband and I both loved it. Good for lunch the next day too! I'll make it again maybe with some extra veg added.

ingredients:

Toss the tofu with paprika, turmeric, salt and pepper.

Pan fry the tofu until golden and crispy on all sides.

Cook the onion, garlic, ginger and tomato for 4-6 minutes.

Add the spices and cook for 1 more minute.

Add the coconut milk, water or broth and sugar and bring to a simmer.

Add the tofu and cook for 6-8 minutes until thickened.
