Start by mixing up the simple stir fry sauce and cornstarch slurry.

Heat oil in a skillet or wok then cook the eggplant until browned and softened.

Cook the onion and bell pepper, then add the garlic, ginger and chili.

Add the sauce, cornstarch slurry and eggplant and cook a few minutes.

Finally, stir in the Thai basil.
