sweet potato cauliflower soup
This soup was easy to make, quick to prep and the taste?…….. SO GOOD!! It is delicious. The entire family enjoyed, even a picky teenager.

what you'll need
1. Start sautéing the veggies. 2. Add the liquids and simmer. 3. Blend half or all of the soup. 4. Enjoy topped with optional roasted chickpeas!
prepare a batch of roasted chickpeas for topping the soup
add all the veggies to a soup pot with 1/4 cup of broth and cook for 7-10 minutes
stir in the turmeric then add the coconut milk and broth, simmer for 20 minutes
blend half the soup or all of it if you want it completely creamy
pour the blended soup back into the pot and stir to combine
serve with lime, cilantro and roasted chickpeas
