vegetarian stuffed poblano peppers

We really loved these! I've never made stuffed peppers so wasn't sure on the effort but it wasn't bad at all. Kids even ate them, so a win over here!


Start with the rice. Cook the onion and garlic for 2-4 minutes.

Add the rice and spices, cook 1 minute, then add the water, bring to a simmer, reduce, cover and cook for 12-14 minutes.

Prep the poblano peppers for stuffing then broil for 6-7 minutes per side to soften and char.

Make the bean, corn and rice filling.

Stuff the peppers, top with cheese and bake 8-10 minutes.
