Sweet Potato Lentil Soup

This creamy and delicious sweet potato red lentil soup is easy to make in less than 40 minutes for a healthy one pot meal.

what you'll need

step 1

cook onion and carrot for 5 minutes

step 2

add garlic & ginger, cook 1 minute then add tomato paste and spices and cook stir for another minute

step 3

add sweet potato, lentil, coconut milk and broth and simmer 20 minutes

step 4

blend half of soup then pour back into pot and combine (or carefully use immersion blender in pot)

step 5

stir in lime and season with salt if needed

Serve with crispy chickpeas, lime wedges and cilantro. Even better, fresh pita or naan for dipping!
