– ½ cup vegan butter, melted – 1 tbsp flaxseed meal + 3 tbsp water – ½ cup brown sugar – ¼ granulated sugar – 2 tsp vanilla extract – 1 ¼ cup oat flour – 1 ¼ cups rolled oats – 1 tsp baking soda – ¼ tsp salt – 1/2 cup chocolate chunks or chips
Melt the vegan butter in the microwave and make the flax “egg” in a small bowl by mixing the flax and water together. Set aside at least 10 minutes for butter to cool and “egg” to thicken.
In a large bowl, mix together the melted butter, brown sugar, granulated sugar, flax egg, and vanilla extract until evenly combined.
Add the oat flour, rolled oats, baking soda and salt and mix until uniform. Stir in the chocolate chunks.
Spread batter in pan and top with extra chocolate chi. Bake for 30-35 minutes, until edges are golden brown and cracks form on the top.
cool for 30 minutes, then slice and enjoy!
