Lemon Chickpea Orzo Soup
This light and healthy soup is packed with flavour and easy to prepare in under 30 minutes. It's also dairy-free and completely vegan.

Saute the onion and carrot.
Add the garlic and cook for another minute.
Add the broth, orzo, chickpeas and bay leaf and simmer until orzo is tender.
Whisk together the miso, tahini, lemon and water then stir into the soup.
Stir in the dill, parsley and spinach.
