This was so easy to throw together and delicious! I’m so glad it yields a big batch, because I think the flavors tasted even better the next day for lunch. 

what you'll need:

Saute the onion and garlic in oil for 2-3 minutes.


Add the seasonings and cook 1 more minute.


Add zucchini, mushroom and bell pepper and cook 5 minutes.


Add pasta, tomato paste and broth and simmer 12-14 min.


Stir in the kale. Rest 3-5 minutes.
