step 1

prepare the butternut squash for roasting

step 2

toss squash with oil, curry powder, salt and pepper and roast

step 3

meanwhile, saute the shallot in coconut oil

step 4

add the garlic, ginger, curry powder and curry paste

step 5

add the coconut milk, tomato, chickpeas and broth and simmer

step 6

add the spinach, roasted squash and remaining seasonings

Serve your delicious curry with rice to soak up all the creamy goodness!
