– 1 tbsp oil – 1 large onion, diced – 2 carrots, diced – 2-3 ribs celery, diced – 4 cloves garlic – 2 tbsp tomato paste – 1 tsp paprika – ½ tsp thyme – ½ tsp oregano – 1 medium sweet potato – 1 cup pearl barley – 1 (796 ml) can diced tomatoes – 6 cups vegetable broth – 2 cups spinach

Saute the onion, carrot and celery for 4-6 min.

Add tomato paste and spices and cook 2-3 min.

Add sweet potato and barley and mix.

Simmer soup for 20 minutes until barley and sweet potato are tender.

Stir in the spinach.

This was fantastic. Very easy to make - just throw everything in the pot and cook, more or less. Made great leftovers too!
