My whole family loved this one. The crunch and soft and the sweet on top of it all was awesome. A pretty quick one to throw together. I love dishes that feel complete and this one hits the spot. It’s going in our regular rotation!

here's what you'll need:

Start by cooking wild rice (substitute brown rice if needed).

Mix chickpeas with seasonings and oil and then roast in oven until crispy.

Mix sweet potato with seasonings and oil and roast along with chickpeas.

Mix up the balsamic vinaigrette.

Add 1 tbsp of the dressing to the kale and massage to soften.

Assemble all the ingredients in a bowl and drizzle with dressing.
