Start by mixing up the dry ingredients in one bowl.
In another bowl mix the wet ingredients, then add the carrot.
Combine wet and dry ingredients. Transfer to 2 round pans and bake 35 minutes. Cool cakes completely in the pans.
While you wait for cakes to cool, make the frosting, choosing either the vegan cream cheese or cashew-based frosting.
Once the cakes are cooled, frost, decorate and enjoy!
