Prepare by soaking the dates for 10-15 minutes while you gather the rest of the ingredients. Drain them well after soaking.
Blend the dates, coconut flour and peanut butter, then blend in the coconut oil until everything is evenly combined.
Firmly press the peanut butter layer into the bottom of a parchment paper-lined 8x8-inch pan.
Melt the chocolate and peanut butter together in a microwave-safe then then pour over the peanut butter layer and smooth.
Chill the bars in the fridge for at least 1 hour then lift out of the pan and slice into bars.
