Ingredients: white or yellow onion garlic ginger ground cumin ground coriander carrots vegetable broth coconut milk
saute the onion and garlic in a soup pot until soft and fragrant
add the ginger, carrot and spices and cook for a few more minutes
add the coconut milk and broth and let simmer for 20-25 minutes until the carrots are tender
use an immersion blender or transfer to a blender and blend until smooth and creamy
enjoy topped with a drizzle of coconut milk or cashew cream and a sprinkle of fresh cilantro
