chickpea cauliflower curry
This is SO good. I used green and it’s still super yummy. I also added another can of chickpeas just for some extra protein. I can’t wait to try it with yellow curry paste!
ready in 30 minutes easy to make simple ingredients vegan & gluten-free serves 4
what you'll need
saute the onion, garlic and ginger until fragrant
add the curry paste and tomato paste and cook for a few more minutes
stir in the chickpeas, bell pepper and carrots
stir in the coconut milk and water
stir in the cauliflower florets and simmer 10-15 minutes until tender
serve with rice for a healthy and delicious meal
