Buffalo Chickpea Sweet Potatoes!
Prepare the chickpeas.
Mix the buffalo chickpea ingredients together in a bowl.
Thicken in a pan.
Cook the chickpea mixture in a pan for 10 minutes until thickened.
Blend the vegan ranch.
Add the vegan ranch ingredients to a blender and mix until smooth.
Stuff your sweet potato!
Add the chickpeas, avocado, ranch and green onion to a baked sweet potato.
This was absolutely to die for! Super easy, incredibly flavourful with different textures. My tummy is in heaven right now!!!
