Vegan Mint Chocolate Chip Smoothie

Ingredients

  • handful of fresh spinach (30 g)
  • 1/4 of an avocado, fresh or frozen (30 g)
  • 1 small frozen banana (100 g)
  • 1/2 a medium zucchini (100 g)
  • 3/4 scoop Vega Performance Protein in Vanilla (30 g)
  • 1 1/2 tsp peppermint extract (start with 1 tsp and add more if you like, I like it with 1 1/2)
  • 1 cup unsweetened almond milk (water is okay too)
  • 2 tbsp cacao nibs (15 g)
  • 1/2 cup steamed and frozen cauliflower piecesĀ (50 g, optional, adds more volume and nutrition)
  • 1/2 tsp spirulina or chlorella powder (optional)

Instructions

  1. Add everything except the cacao nibs to a high-powered blender and mix until very smooth and creamy.
  2. Add the cacao nibs and pulse a few times or just sprinkle them on top or stir them in.
