These vegan hemp protein truffles were actually born out of a failed baking attempt from last week. I had some steamed sweet potato I needed to use up, so I thought I’d try a vegan version of these Flourless Chocolate Brownies. I simply replaced the eggs with flax eggs and the batter taste delicious as I popped them in the oven. 20 minutes later they hadn’t baked at all, it was a big pan of mush. Baking. Fail. Those happen sometimes, especially when replacing key ingredients such as eggs.
While my failed brownies weren’t baking, I threw together some hemp protein, cocoa, peanut butter and maple syrup that I had planned to coerce into some sort of frosting. That didn’t work out so well either, but I managed to adjust the amounts and morph it into these truffles! These babies are rich, chocolatey and decadent, not words commonly used to describe something healthy.
However, if you look at the simple ingredients you’ll find a myriad of health-boosting qualities! They’re high in plant-based protein, antioxidants, essential fatty acids and numerous vitamins and minerals.
- 1/4 cup + 1 tbsp organic hemp protein
- 1/4 cup raw cacao powder
- 2 heaping tbsp, natural peanut butter
- 2 tbsp melted coconut oil
- 3 tbsp maple syrup
- hemp seeds for rolling
- Mix all ingredients in a bowl.
- Roll into 8 balls.
- Coat with hemp seeds.
- Set in the fridge for at least 3-4 hours.
- Store in the fridge in an air-tight container.
