It’s definitely that time of year, I bet we all know someone who is sick right now. For me, it’s my husband with a nasty cold that I refuse to catch! For dinner tonight, just to be sure, I made this Superfood Salad with Cilantro Cashew Dressing that is packed full of immunity-boosting superfoods! Pomegranate, spinach, avocado, mandarin oranges, cilantro add tons of vitamins, minerals and antioxidants to help support the immune system.
Boost the Immune System
With all this cold weather, I need all the immunity-boosting I can get and maintaining a healthy diet through the winter months is the way to go. I’m hoping to sail through winter and right into spring, completely cold-free. Cue Superfood Salad with Cilantro Cashew Dressing.
This salad is high in immune-boosting vitamin C and E, omega-3 fatty acids, B vitamins, fibre and mood-boosting calcium, chromium, iron, magnesium and zinc. Everything you need to feel your best during these cold, grey winter months.

Superfood Immunity-Booster Salad
- Cuisine: Vegan
- For the Salad:
- 1 x 312g container of organic baby spinach
- 1/2 cup raw hemp seeds
- 1/2 cup walnut pieces
- 1 avocado, diced
- 1 pomegranate
- 1/2 large cucumber, diced
- 2 mandarin oranges
- 10 dates, pitted and diced
- For the Dressing:
- 1/4 cup extra virgin olive oil
- 1/2 cup packed cilantro
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 3 cloves garlic
- 2 tbsp red wine vinegar
- 1/2 cup raw cashews
- juice of 1 lemon
- 1/2 cup water
- 1 tsp maple syrup
- Place all the salad ingredients in a large bowl.
- Place all the dressing ingredients in a food processor or blender. Mix until smooth.
- Add dressing to salad and mix.
- Makes 4 dinner-sized portions or 8 sides.
