Simple, fresh and completely raw this dish is perfect for a warm, summer evening.
Ingredients
- 3 cups spinach, lightly packed
- 1 cup hemp seeds
- 1 cup packed fresh basil
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic
- 1/2 tsp sea salt
Instructions
- Place all the pesto ingredients into a food processor or high-speed blender, mix on slow, stopping to scrape down the sides as needed.
- Store in the fridge for up to 4 days or freeze for up to 2 months.
Notes
To make the pasta dish as shown, spiralize 1-2 large zucchinis, dice 6 mini bell peppers and finely chop 1 crown of broccoli. Add it all to a bowl and top with the hemp seed pesto,
