Welcome to my What I Ate Wednesday Post Week 21! I share these posts every Wednesday to show a day of vegan eating in real life. I hope these one day vegan meal plan posts help inspire you and give you some ideas for creating a days worth of plant-based food that’s easy, healthy and delicious.
A lot of the time I don’t cook or create meals using recipes, so these are impromptu meals I quickly throw together. Most weeks I do food prep on Sundays and you can read more about that in my Vegan Food Prep and Vegan Meal Planning posts. I’ve also share a number of weekly meal prep posts and you can find all of those here.
One Day Vegan Meal Plan
This weeks daily vegan meal plan features delicious oats made with pomegranate and raisins for breakfast. For a morning snack, I had one of my vegan apple cinnamon muffins that I made on the weekend with green tea and a banana. Lunch was Kale, Lentil and Sweet Potato Stew leftover from dinner last night, I had an apple with peanut butter for an afternoon snack and dinner was an awesome kale pasta salad loaded with superfoods like pomegranate and broccoli. I topped it with my Cilantro Cashew Dressing but you could also do a tahini dressing, balsamic vinaigrette or Avocado Kale Salad with Almond Basil Dressing.
- Overnight Oats made with Almond Milk, Pomegranate Seeds, Raisins, Hemp Seeds and Unsweetened Shredded Coconut
- Small Coffee with Almond Milk
To make the overnight oats, add all the ingredients to a container and placed in the fridge overnight. I used about 1/2 a cup of quick oats and 2/3 cup of milk. I added a few tablespoons each of pomegranate seeds, raisins, hemp seeds and shredded coconut.
I made coffee at home and added a splash of Silk Almond Milk. For more options for replacing dairy, check out this post.
- Green Tea
- Apple Cinnamon Muffin
I made a batch of the muffins on the weekend. I like prepping a couple of grab-n-go snacks I can take to work during the week. I’ll usually have a piece of fruit or handful of berries with my morning snack. After my first cup of coffee in the morning, I switch to green tea and then herbal tea later in the day.
I made this stew for dinner last night and it’s amazing for leftovers. The flavours are even better the next day!
- Apple with Peanut Butter
- Baby Kale Pasta Salad with Pomegranate Seeds, Raisins, Broccoli, Cucumber, Green Pepper, Organic Brown Rice Pasta, Cilantro Cashew Dressing
This was awesome and came together so quick and easy. All you need to do is cook some pasta, I used organic brown rice pasta, then toss it with th rest of the ingredients. You can make extra and take the leftovers for lunch the next day.
