One Day Vegan Meal Plan
This weeks meal plan features my favourite carrot cake protein oats, some white bean falafels and a superfood salad with creamy cilantro dressing.
- Glass of water with lemon
- 1/2 a fresh mango
I drink a glass of lemon water as soon as I get up every morning, it always gets me going and is just so refreshing! I was a little hungry so I had some mango before heading to the gym.
- Carrot Cake Protein Oats
- Coffee with Almond Milk
- Apple and cashews
These were leftover from dinner last night and did not disappoint for lunch today. To make them, I roasted the cauliflower with nutritional yeast then loaded it into a bowl with cucumber, red onion, carrot, peas, avocado and spinach. I made a simple and delicious, creamy tahini ranch dressing to top it all off.
- 1 serving of Vega Sport Protein in Chocolate
- Banana with peanut butter, coconut and chopped dates
