Marinated Chickpeas

Description

Simple, balsamic marinated chickpeas that are the perfect flavourful addition to salads and bowls.


Ingredients

  • 1 19 oz can of chickpeas, drained and rinsed (2.5 cups)
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp chili flakes

Instructions

  1. Mix everything together in a sealable container and marinate for at least one hour up to overnight.
  2. Store in the fridge for up to 5 days.

Notes

Omit the red pepper flakes if you’re sensitive to spice.

For additional flavouring, try up to 1 tbsp of maple syrup, up to 1 tbsp dijon mustard and/or 2-3 minced cloves of garlic.
