You guys might have noticed by now that I like snacks and treats that take about 5 minutes to make. Sure I’ll dole out the time for something special, but on a typical day I aim for less than 10 minutes. This is where simple, homemade Larabars come in! I make these all the time and the flavour possibilities are endless. I rarely make the same combo twice so get creative and make a batch of these raw, vegan easy-as-pie bars!
Homemade Larabars 3 Ways
I pretty much always a base of dates in these bars. Dates are the perfect sweet food and though they’re high in natural sugar with also pack a ton of nutrition too. The health benefits of these little guys are many but they’re particularly high in fibre, calcium, iron, potassium, magnesium and B vitamins. They also make an awesome, low-calorie pre-workout snack due to their natural sugars. If you can’t do dates, you can use soaked dried raisins or figs as an alternative. Pour boiling water over them in a bowl and soak for 15 minutes before using.
Energy Bar Variations
I’m sure most of you have heard of, if not tried, a Larabar. They’re fantastic vegan, natural bars that use simple, whole ingredients and they’re a cinch to make at home. In addition to the cup of dates I usually use 1 cups of nuts and then add in whatever you like such as raisins, dark chocolate, dried cranberries, coconut, cacao nibs, lemon zest, almond butter or whatever flavour add-ins you choose!
Whether you purchase Larabars or make you own energy bars at home both are an excellent alternative to other store-bought bars that are full of preservatives, added sugar and other unnecessary ingredients.
How to Make Energy Bars
Here are 3 varieties you can make at home with just a few basic items from the pantry! For each variation simply process all the ingredients in a food processor or high-powered blender, press the dough into a square and cut into 8 bars. Done! I wrap them individually in wax paper so I have a quick and easy snack to grab all week! My favourite of these three is the Coconut Cream but they’re all pretty tasty! Enjoy!Print
Caramel Pecan Energy Bars
- 1 cup soft pitted dates
- 1 cup pecans
- Blend the ingredients together until it forms a thick dough. Press into a square and cut into bars.
Coconut Cream Energy Bars
- 1 cup pitted soft dates
- 1 tbsp coconut oil
- 1/2 cup raw almonds
- 1/2 cup unsweetened shredded coconut
- Blend all ingredients until it forms a thick dough. Place the dough between two pieces of wax or parchment paper and shape into a square. Cut into 8 bars and enjoy.
Chocolate Peanut Butter Energy Bars
- 1 cup soft pitted dates
- 1/3 cup natural peanut butter
- 1/4 cup cacao powder
- 1/2 cup raw walnuts
- Blend ingredients together until they form a thick dough. Press into a square between two sheets of parchment or wax paper then cut into squares and enjoy.
