- Place the dates in a bowl and cover with hot water. Let soak for 15 minutes then drain well.
- Add the coconut, goji berries and cashews to a food processor and mix on high for about 30 seconds.
- Add the drained dates and process into a crumbly dough.
- Roll the dough into 15 balls and roll them in shredded coconut if you like. Store in the fridge for up to 7 days or freezer for up to 3 months.
To make these nut-free, omit the cashews and increase the coconut to 1 1/2 cups.
