Coconut Goji Berry Bliss Balls

These yummy little treats are packed with nutrition, easy to make and perfect for snacking and dessert.

Ingredients

  • 1 cup (220 g) packed, pitted dates
  • 1 cup (95 g) fine or medium unsweetened shredded coconut
  • 1/2 cup (70 g) raw cashews
  • 1/2 cup (65 g) dried goji berries
  • extra coconut for coating, optional

Instructions

  1. Place the dates in a bowl and cover with hot water. Let soak for 15 minutes then drain well.
  2. Add the coconut, goji berries and cashews to a food processor and mix on high for about 30 seconds.
  3. Add the drained dates and process into a crumbly dough.
  4. Roll the dough into 15 balls and roll them in shredded coconut if you like. Store in the fridge for up to 7 days or freezer for up to 3 months.

Notes

To make these nut-free, omit the cashews and increase the coconut to 1 1/2 cups.
