Coconut Bacon

Description

Sweet and salty coconut bacon makes an amazing addition to salads, sandwiches and more. Try it sprinkled it on toast and oatmeal!


Ingredients

  • 2 cups plain unsweetened coconut flakes
  • 2 tbsp soy sauce or gluten-free tamari
  • 2 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1/2 tsp smoked paprika, optional
  • pinch of pepper

Instructions

  1. Pre-heat the oven to 325 degrees F.
  2. Add the coconut flakes to a medium or large mixing bowl.
  3. Mix the rest of the ingredients together in a small dish then pour over the coconut flakes.
  4. Fold together until all the coconut flakes are coated.
  5. Spread the coconut flakes on a baking sheet in an even layer. They can be made directly on the pan or you can use parchment paper for easy clean up.
  6. Bake for 10 minutes then stir and flip. Spread back into an even layer. Continue baking in 3-5 minute increments until dark golden brown. Watch carefully once it starts turning brown as it will burn very quickly.
  7. Remove from the oven and let cool completely on the pan.
  8. Store at room temperature in an airtight container for up to 3 weeks or freeze for up to 3 months.
