This cozy bowl of protein oatmeal is ultra-creamy and with all the veggies and fibre, it fills you up nicely to keep you going all morning.

Ingredients

  • 1/3 cup (30 g) rolled oats
  • 1 scoop (30 g) vegan vanilla protein powder
  • 1/2 cup (120 g) pumpkin puree
  • 1/3 cup (30 g) finely grated carrot
  • 1/3 cup (30 g) finely grated zucchini
  • 1 tbsp (12 g) chia seeds
  • generous pinch of sea salt
  • 1/2 tsp pumpkin pie spice or cinnamon
  • 1 cup water

Instructions

  1. Add everything to a small pot and cook over medium heat until creamy and heated through, about 7-8 minutes. Watch carefully and stir often to ensure it doesn’t burn.
  2. Scoop into a bowl and enjoy as is or top with a drizzle of tahini or almond butter, maple syrup and a few crushed walnuts.
