I’ve been on a “put carrot in everything” kick lately and today we’re adding Vegan Turmeric Carrot Oatmeal Cookies to the growing list of carrot recipes on the blog. These hearty breakfast cookies are gluten-free, oil-free, naturally-sweetened and full of superfood ingredients like oats, flax, turmeric and walnuts.
Look at the beautiful, orange colour of these cookies. That gorgeous orange colour is thanks to healthy carrots and anti-inflammatory spice, turmeric. Carrots are high in beta-carotene and fibre and are a good source of antioxidants, vitamin C, vitamin A, and vitamin K as well as potassium, iron and copper. You can see why I love adding them to everything!
Turmeric in Cookies?
If you’ve been by Running on Real Food before, you know I like to sneak turmeric into recipes for it’s gorgeous colour and it’s health benefits. One of my favourite ways I’ve used it was in my Peanut Butter Cup Protein Smoothie and now these cookies will be giving that smoothie a run for its money.
Vegan Turmeric Carrot Oatmeal Cookies
These cookies are hearty, satisfying, soft and comforting with all sorts of flavour from wholesome ingredients like walnuts, coconut, carrot, turmeric and peanut butter. They’re a little crispy on the outside, chunky, soft and chewy on the inside and naturally sweetened with pure maple syrup.
Carrot Cookie Nutrition Facts
The ingredients in these these cookies bring the fat up a bit higher than my usually healthy cookie recipes however the fats comes from nutritious ingredients like walnuts, coconut and flax. The higher fat content makes these a well-balanced snack as they’re fairly low in carbohydrates and also contain 5 grams of protein per cookie. This macronutrient balance will help keep blood sugar levels stable as fat is more slowly digested than carbohydrates, helping keep you fuller, longer and provide long-lasting energy.

Hearty, satisfying, soft and chewy, these comforting cookies are just what you need for a wholesome treat. They’re oil-free, gluten-free, vegan and sweetened naturally with pure maple syrup. Enjoy these bright orange cookies!
- 2 flax eggs (mix 2 tbsp ground flax with 6 tbsp water)
- 1 cup rolled oats
- 1/2 cup oat flour (make by blending or food processing oats, you’ll need a little more than 1/2 cup of oats to make 1/2 cup of oat flour)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 1/2 tsp ground turmeric
- 1/4 cup pure maple syrup
- 1/2 cup natural peanut butter
- 1 tsp pure vanilla extract
- 1 cup finely grated carrot
- 1/2 cup unsweetened shredded coconut
- 1/2 cup walnut pieces
- Pre-heat the oven to 350 degrees.
- Mix the flax eggs in a small bowl and set aside.
- Add all the dry ingredients to a bowl and mix well to combine.
- Mix in the flax egg, pure maple syrup, natural peanut butter and pure vanilla extract.
- Fold in the carrots, walnuts and coconut.
- Line a baking pan with parchment paper or very lightly grease it, or use a silicon baking mat.
- Placing 12 balls of dough on a baking pan and press each ball down into a cookie. Bake for 12-15 minutes until firm and golden brown.
