About this Recipe

Baked oatmeal is wonderful for a nutritious breakfast. It’s also great for making ahead of time and reheating all week…or eating cold!

This recipe couldn’t be easier to make. All you have to do is mix everything up right in the baking dish, bake for 30 minutes and its done.

They’re super yummy and satisfying and also gluten-free, vegan and low in added sugar.

Walnuts and raisins are added to the mix for extra flavour and it all bakes up into a delicious and wholesome oatmeal bake that not only tastes amazing but will make your home smell amazing too!

Ingredients & Substitutions

  • Rolled Oats: My favourite type of oat is large flake rolled oats but you can use any kind of oats in this recipe (except for steel cut oats – try my baked steel cut oatmeal for that). I would recommend sticking to rolled oats over quick oats or minute oats though as the texture will be much better.
  • Apple. Any kind of apple works. Just dice it up and throw it in! I like something like Gala, Honey Crisp or Fiji.
  • Cinnamon: I used 2 tsp but you could probably bump that up a bit if you really love cinnamon flavour.
  • Ground Flaxseed: Ground flax acts a bit like an egg and helps bind the recipe. Chia seeds would do the same trick so feel free to sub those in or go with 1 tbsp of each.
  • Raisins & Walnuts: For add-ins, I used raisins and walnuts, which pair nicely with the apple and cinnamon but you can mix and match using these or other additions like pumpkin seeds, berries, dates or cranberries.
  • Baking Powder: Optional but helps with a little lift so the oats aren’t as dense.

I kept this recipe simple and oil-free but for richer, moister baked oats, you can add 2-3 tbsp melted coconut oil or butter to the recipe.

How to Make Apple Baked Oatmeal

Mix Everything up

Mix up the oats, flax, baking powder, spices and salt in an 8×8-inch baking dish.

Add the water, milk, raisins, apple, vanilla and nuts and mix everything up until fully combined, spreading it into an even layer.

Do I have to peel the apple?

Nope! It’s not necessary to peel the apple for this recipe. The peel gets nice and soft once baked. You can peel it if you prefer though!

I do this all right in the baking dish but you can mix it in a bowl and then transfer it to the dish if you prefer.

Bake Until Firm

Bake the oats for 30 minutes until firm and golden brown.

Cool, Slice and Enjoy!

Let them cool in the pan for 5-10 minutes, then slice into portions and lift out of the pan with a spatula.

Storing

  • Let cool before storing.
  • Store in a sealed container in the fridge for up to 5 days.
  • Enjoy cold or reheat in the oven or microwave until heated through.
  • Baked oats can also be frozen in individual portions for up to 3 months. Thaw in the fridge or reheat from frozen in the microwave or oven.

Ingredients

  • 2 cups oats (200 g)
  • 2 tbsp ground flaxseed (16 g
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg or allspice, optional
  • 1/4 tsp salt
  • 1 cup water
  • 1 cup plant-based milk
  • 1 medium apple, diced
  • 1 tsp pure vanilla extract
  • 3 tbsp raisins
  • 3 tbsp chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350 F.
  2. Mix the oats, flax, baking powder, spices and salt in an 8×8-inch baking dish.
  3. Add the rest of the ingredients and mix. Spread into an even layer.
  4. Bake for 30 minutes until firm and golden brown.
  5. Let it sit in the dish for 5-10 minutes, then slice into 6 pieces and carefully lift out with a spatula.
  6. Enjoy plain for a quick snack or serve with toppings like berries, dairy-free yogurt, almond butter and a drizzle of pure maple syrup.
