Happy What I Ate Wedensday my lovely friends!
Today’s What I Ate Wednesday post is going to be a speedy one. I have a few freelance projects on the go and we’re on the search for a new apartment so I’ve been pretty wiped this week. I’m almost done with my side projects and hopefully we find a new place soon , then I’ll have some more time for the blog. There’s so much I want to share with you and I hope I can get to it soon!
I didn’t end up working out today so I’m re-arranging my schedule to make today a much-needed rest day. I had planned to run at lunch today but somehow I forgot my workout clothes at home so I just went for a 30 minute power walk. I think it’s for the best though because my whole body hurts. Back to training tomorrow!
Breakfast today was this yummy Peanut Butter Berry Smoothie. I drank some while I was getting ready for work and took the rest to-go to sip throughout the morning.
- 1 1/2 cups True Silk Coconut Milk
- 1 cup frozen berries (blackberries, cherries, strawberreis)
- 1 banana
- 2 tbsp hemp protein
- 1 scoop Daily Greens
- 1 seriously heaping tbsp natural peanut butter
My morning snack was two of these Hemp and Hazelnut Protein Bite. I wasn’t going to share a proper recipe post for these but I think I will because they were really good today! They only have 6 ingredients and take about 5 minutes to make, I just have to measure out the ingredients again to be sure. That means I get to eat another batch and that’s alright by me!
Lunch was two leftover Lentil Tacos from last night, an apple and green ginger tea.
I had two snacks during the afternoon, a handful of almonds and later on raw veggies with Spicy Red Pepper Hummus. I also had another two Hemp and Hazelnut Protein Bites when I got home from work, we were heading right out to look at an apartment and I was starvin’ marvin’ by that time.
I’m lucky I did my Sunday food prep because I was feeling pretty lazy by the time I finally got home tonight. I had a nightmare commute home from work and then we ran straight out the look at the apartment. I just didn’t feel like cooking when I got back. Food prep to the rescue! I just threw together a quick salad with quinoa, roasted beets and yams, cauliflower, cucumber and green peppers. I made a dressing with raw honey, balsamic vinegar, olive oil, dijon mustard and garlic annnnd, then I scarfed it all down in about 5 minutes.
I really want dessert right now but honestly I’m too tired to make anything so I’m done eating for the day! Told you it would be a speedy WIAW!
