Dressings and sauces are some of the easiest things to make at home, allowing you to skip their scary, store-bought counterparts. I’m sure there are some okay store-bought options out there, but the majority of the dressings in the condiment aisle are so far from food I’m not quite sure what they’re doing there!
I don’t usually measure my dressings but I thought I’d write this one down just in case it was a keeper, and guess what?! It totally was! Mmmm, it’s so tasty. You can use it as salad dressing, dip for asian lettuce wraps or a sauce for noodles, it’s really versatile!
Ingredients that typically make it into my homemade salad dressings are olive oil, grapeseed oil, apple cider vinegar, balsamic vinegar, red wine vinegar, garlic, basil, dijon mustard, nut butters, maple syrup, sea salt, nutritional yeast and a myriad of other herbs, spices and raw vegetables. There are so many options and flavour combinations that you can make a boring old salad really stand out and this tasty almond lime dressing should do just that!Print
Sweet and Spicy Almond Lime Dresssing
- Cuisine: Vegan
- 5 tbsp almond butter
- 1 tbsp packed fresh cilantro
- 1/8 cup fresh lime juice
- 1 tbsp reduced sodium soy sauce
- 1 tbsp rice vinegar
- 3 large cloves garlic, peeled
- 2 tbsp coconut sugar
- 1 tsp red pepper flakes
- 3 tbsp water
- Place all ingredients in a high-powered blender or food processor and mix well.
- Makes approximately 1 cup.
Make sure the almond butter you’re using is quite goopy, mine was very oily so it worked really well. If it’s too dry you may need to add more water. If you don’t want it too spicy, just reduce the red pepper flakes down to 1/2 tsp or omit them all together. That’s about all you need to know! This dressing takes all of about 5 minutes to throw together making it perfect for a busy weeknight dinner.
