It’s definitely that time of year, I bet we all know someone who is sick right now. For me, it’s my husband with a nasty cold that I refuse to catch! For dinner tonight, just to be sure, it had to be a big, green salad packed full of immunity-boosting superfoods! Booyah! Pomegranate, spinach, avocado, mandarin oranges, cilantro – they all have something to offer ie.tons of vitamins, minerals and antioxidants.
It snowed today in Vancouver, barf. Not much, but enough to make me a basket-case driving to work and back. There wasn’t even really any on the road, haha. I’m a huge, huge baby when it comes to winter driving. It can snow all it wants the week of Christmas when I don’t have anywhere to be, but for now…I hope it sticks to the mountains. I’m already nervous about driving on icy roads early tomorrow morning. How much longer until we can teleport? I’m still waiting for that.
With all this cold weather, I need all the immunity-boosting I can get and maintaining a healthy diet through the winter months is the way to go. I’m hoping to sail through winter and right into spring, completely cold-free. Cuz ain’t nobody got time for dat! Cue Superfood Immunity-Boosting Salad with Cilantro Cashew Dressing. Superfood Immunity-Booster Salad
- Cuisine: Vegan
- For the Salad:
- 1 x 312g container of organic baby spinach
- 1/2 cup raw hemp seeds
- 1/2 cup walnut pieces
- 1 avocado, diced
- 1 pomegranate
- 1/2 large cucumber, diced
- 2 mandarin oranges
- 10 dates, pitted and diced
- For the Dressing:
- 1/4 cup extra virgin olive oil
- 1/2 cup packed cilantro
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 3 cloves garlic
- 2 tbsp red wine vinegar
- 1/2 cup raw cashews
- juice of 1 lemon
- 1/2 cup water
- 1 tsp maple syrup
- Place all the salad ingredients in a large bowl.
- Place all the dressing ingredients in a food processor or blender. Mix until smooth.
- Add dressing to salad and mix.
- Makes 4 dinner-sized portions or 8 sides.
